
Chorizo, Goat Cheese & CBD Quesadillas

A reinvented quesadilla combining the spiciness of chorizo, the creaminess of goat cheese, and a hint of CBD for a unique culinary experience.
Ingredients
- Olive oil : 15 mL
- Green onions (white & green), chopped : 100 g
- Chorizo (remove casing and crumble) : 60 g
- Creamy goat cheese : 60 g
- CBD oil : 10 mL
- Flour tortillas (6 inches) : 2
- Sour cream : Optional, for serving
- Salsa : Optional, for serving
Instructions
- In a medium skillet, heat olive oil over medium heat.
- Add green onions and chorizo, crumbling the sausage with a spoon. Sauté until onions are tender and meat is fully cooked.
- In a medium bowl, mix goat cheese and CBD oil. Add the chorizo mixture and combine well. Do not clean the skillet.
- In the same skillet, heat one tortilla.
- Spread the filling over the tortilla, leaving a 0.5 cm border, and place the second tortilla on top.
- Cook the quesadilla, flipping once, until golden brown and crispy, about 5–7 minutes total.
- Let the quesadilla rest for a few minutes before cutting in half and serving with sour cream and salsa, if desired.
