
Chicken and CBD Banh Mi

The Banh Mi is a flavorful Vietnamese sandwich. Our version features sliced chicken, shredded cabbage and carrots, and a garlicky, citrusy dressing. Use the best bread possible — we recommend a light, airy French baguette with a thin crust. Serve immediately to avoid soggy bread.
Ingredients
- Water : 30 mL
- Fresh lime juice : 15 mL
- Fish sauce (nam pla) : 10 mL
- CBD oil : 10 mL
- Toasted sesame oil : 5 mL
- Garlic, minced : 1 small clove
- Soy sauce : 5 mL
- Sugar : 15 g
- Baguette (15 cm) : 2 slices, split in half
- Rotisserie chicken breast, sliced : 2
- Shredded napa cabbage : 25 g
- Shredded carrots : 25 g
- Cilantro : 6 sprigs
Instructions
- In a small bowl, whisk together the water, lime juice, fish sauce, CBD oil, sesame oil, garlic, soy sauce, and sugar until sugar is dissolved and the dressing is well combined.
- Drizzle the dressing over the cut sides of the bread. Arrange sliced chicken on the sandwich and top with shredded vegetables and cilantro. Spoon any remaining dressing on top.
