
Mushroom Risotto with CBD

Ingredients
- Arborio rice : 125 g
- Vegetable broth : 375 mL
- Fresh mushrooms : 250 g
- Shallot : 1
- Parmesan : 40 g
- Olive oil : 15 mL
- CBD oil : 8 drops
- Salt & pepper : To taste
Instructions
- Set your Cookeo to « Sauté » mode. Add olive oil and sauté the sliced mushrooms with the minced shallot for about 5 minutes. Season with salt and pepper to taste.
- Add the rice and toast lightly for 2 minutes to develop the aroma.
- Pour in the vegetable broth and switch to « Pressure Cook » mode for 15 minutes. The rice will become perfectly creamy and flavorful.
- At the end of cooking, stir in the grated Parmesan and CBD oil. Mix gently so the flavors blend harmoniously.
