This CBD tomato tart combines a homemade shortcrust pastry, ripe tomatoes, and a drizzle of CBD Oil added at the end of preparation. The result: a crisp base, tomatoes softened to melting perfection and fragrant with herbes de Provence, and a subtle CBD touch that adds an earthy note without ever masking the dish’s flavor. Allow just over an hour between prep and baking, including the dough’s resting time. This recipe works equally well as a light meal or a shareable starter, and it’s easy to prepare ahead of time.

Ingredients

  • 1 homemade shortcrust pastry (or 250 g flour, 1 egg, 20 ml olive oil, water, salt, pepper)
  • 3 ripe tomatoes
  • 2 eggs
  • 20 ml olive oil (or hemp seed oil)
  • 1 sprig fresh rosemary
  • A few sprigs fresh thyme
  • About ten fresh basil leaves
  • 10 ml CBD oil
  • Flaky sea salt, ground pepper

Instructions

  1. Make the pastry: in a mixing bowl, combine the flour, one egg, the olive oil, a little water, salt, and pepper until you get a smooth ball of dough. Shape it into a ball, wrap it in plastic wrap or cover with a clean kitchen towel, and let it rest for 30 minutes at room temperature.
  2. Meanwhile, preheat the oven to 180°C (350°F) and wash the tomatoes. Slice them thinly, about 5 mm thick, and lay them on paper towels to draw out excess water.
  3. Roll out the rested dough on a floured surface to about 3 mm thick, then transfer it to a buttered tart pan or one lined with parchment paper.
  4. Beat the two eggs in a bowl with the 10 ml of CBD oil. Brush this mixture over the pastry base with a pastry brush: it will act as a binder and carry the CBD directly into contact with the filling.
  5. Strip the rosemary and thyme leaves from their stems, roughly chop the basil, and scatter these herbs over the brushed pastry.
  6. Arrange the tomato slices in a rosette pattern over the pastry, overlapping them slightly. Season with flaky sea salt and pepper.
  7. Lower the oven to 160°C (320°F) and bake the tart for 30 to 40 minutes, until the tomatoes are beautifully caramelized at the edges and the pastry is golden and cooked through.
  8. Let cool for 10 minutes before slicing: the tart holds together better and the flavors come through fully once slightly warm.

  • Choose firm, meaty tomatoes (such as beefsteak or Roma): they release less water and caramelize better without making the pastry soggy.
  • Don’t skip the resting time for the dough: without the 30-minute rest, it will shrink during baking and become hard to roll out thinly.
