
Carrot Cake with CBD

A cozy autumn treat combining the richness of carrots with the calming touch of CBD.
Ingredients
- All-purpose flour : 240 g
- Baking powder : 8 g
- Ground cinnamon : 4 g
- Ground ginger : 2 g
- Ground nutmeg : 2 g
- Salt : 2 g
- Grated carrots : 320 g
- Chopped pecans : 120 g
- Canola oil : 240 mL
- Eggs : 4
- Brown sugar : 200 g
- Vanilla extract : 10 mL
- Cream cheese (softened) : 450 g
- CBD butter (softened) : 60 g
- Powdered sugar : 360 g
- Vanilla extract : 10 mL
- Salt : 2 g
Instructions
- Preheat the oven to 170 °C (340 °F). Grease two 9-inch (23 cm) square pans.
- In a bowl, mix the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
- In another bowl, combine the carrots, 75 g of pecans, oil, eggs, brown sugar, and vanilla. Mix until smooth.
- Add the flour mixture to the wet mixture and mix until the batter is smooth.
- Pour the batter into prepared pans and bake for 25-30 minutes. Check doneness with a toothpick.
- Let the cakes cool in the pans.
- For the frosting, beat cream cheese and CBD butter until smooth. Add powdered sugar, vanilla, and salt, and beat until light and creamy.
- Once the cakes are cooled, spread a layer of frosting on the first cake. Place the second cake on top and cover entirely with the remaining frosting. Decorate with remaining pecans.
