Foie gras, a symbol of refined French cuisine, is reinvented here with CBD, adding a relaxing touch to this luxurious dish. Learn how to prepare this unique version that combines gourmet pleasure with subtle relaxing benefits.
Ingredients
- Raw duck foie gras : 500 g
- CBD oil : 10 mL
- Salt : 2 tsp
- Pepper : 1 tsp
- Sugar : Pinch
- Cognac or Armagnac : 50 mL
Instructions
- Devein the foie gras:Separate the lobes and carefully remove veins. Let it reach room temperature and set aside.
- Seasoning:Mix salt, pepper, and sugar, rub all over the foie gras. Pour cognac or Armagnac, massage gently, and marinate 12 hours in the fridge.
- CBD oil infusion:Spread the CBD oil over all surfaces and wrap in plastic wrap.
- Bain-marie cooking:Preheat oven to 80°C. Place foie gras in a terrine, then in a larger dish with hot water. Cover with foil and bake 40 minutes.
- Rest and serve:Let cool, refrigerate a few hours, then serve thin slices on toast or country bread with fig chutney or caramelized onions.
