Foie gras, a symbol of refined French cuisine, is reinvented here with CBD, adding a relaxing touch to this luxurious dish. Learn how to prepare this unique version that combines gourmet pleasure with subtle relaxing benefits.

Ingredients

  • Raw duck foie gras : 500 g
  • CBD oil : 10 mL
  • Salt : 2 tsp
  • Pepper : 1 tsp
  • Sugar : Pinch
  • Cognac or Armagnac : 50 mL

Instructions

  1. Devein the foie gras:Separate the lobes and carefully remove veins. Let it reach room temperature and set aside.
  2. Seasoning:Mix salt, pepper, and sugar, rub all over the foie gras. Pour cognac or Armagnac, massage gently, and marinate 12 hours in the fridge.
  3. CBD oil infusion:Spread the CBD oil over all surfaces and wrap in plastic wrap.
  4. Bain-marie cooking:Preheat oven to 80°C. Place foie gras in a terrine, then in a larger dish with hot water. Cover with foil and bake 40 minutes.
  5. Rest and serve:Let cool, refrigerate a few hours, then serve thin slices on toast or country bread with fig chutney or caramelized onions.
