
Butternut Squash Soup with CBD

This Butternut Squash Soup with CBD is creamy and flavorful. Easy to prepare with pre-peeled and chopped squash, it makes a comforting dish perfect for chilly evenings. Allow the soup to cool slightly before blending for safety.
Ingredients
- CBD butter : 30 g
- Medium onion : 1
- Peeled and chopped butternut squash : 900–1300 g
- Unsalted chicken broth : 1.3 L
- Fresh cream : 120 mL
- Ground nutmeg : ½ tsp
- Salt : To taste
- Black pepper : To taste
Instructions
- In a large pot, melt the CBD butter over medium-low heat. Add the onion and cook until translucent, about 8 minutes.
- Add the squash and broth. Bring to a boil, then simmer until the squash is tender, 15–20 minutes. Stir in the cream, then turn off the heat and let it cool slightly.
- Blend the soup in two batches in a blender or use an immersion blender directly in the pot.
- Return the soup to the pot and gently reheat. Season with nutmeg, salt, and pepper before serving.
